Texas is a big state that likes big portions. Food is at the centre of celebration, hospitality and communion of people. It connects folks as they enjoy the tastes of other areas and cultures. It is a huge pleasure in life for many. Yet the understanding of the whole food chain and our part in it is increasingly lacking.

Texas grandly exemplifies the issue. It provides plentiful, great tasting fare and avenues of fast food outlets that supply nutritionally worthless, addictive junk.

The children of today are the first generation in humanity that will die before their parents because of health problems related to diet.

There is huge pressure on the natural world as it tries to sustain an eating culture that is neither healthy for it nor us. The battery farming of livestock leads to great animal suffering and environmental damage. Where should we put the mountains of throw away packaging ? When did it become more acceptable to trash a plate than to wash it up ?
Maybe there needs to be education and better understanding about the connection between food and its production, environmental impact, waste, physical health and the well-being of families that eat together rather than alone in a parking lot of a drive-through.
